This is a simple cheese cake recipe which i guarantee no one will ever fail in the endeavor if the recipe is followed closely.
Ingredients:
Base
To make biscuit crust, you can use digestive biscuits, marie biscuits or chocolate cookies (e.g. oreo). Just crush the biscuits into crumbs and mix with melted unti well-combined and press on the the base of the baking tin.
Lemon Cheese Filling:
500g softened cream cheese
90g caster sugar
2 eggs
1 1/2 tsp grated lemon rind
Methods:
- Beat cream cheese and sugar at low speed until smooth. Add in eggs one at a time and mix well. Lastly add in grated lemon rind.
- Pour cream cheese mixture onto crust and bake at 170degree celcius for 20 minutes or until center is set.
- Let cake cool in the oven with heat off for 1 hour.
Topping:
- For a simple topping, just buy ready mix jelly powder. Follow the instruction and pour on top of the cooled cheesecake.
- Chill in the fridge for at least 6 hours or overnight before serving.
