Baked Lemon Cheese Cake


This is a simple cheese cake recipe which i guarantee no one will ever fail in the endeavor if the recipe is followed closely.

Ingredients:

Base
To make biscuit crust, you can use digestive biscuits, marie biscuits or chocolate cookies (e.g. oreo). Just crush the biscuits into crumbs and mix with melted unti well-combined and press on the the base of the baking tin.

Lemon Cheese Filling:
500g softened cream cheese
90g caster sugar
2 eggs
1 1/2 tsp grated lemon rind

Methods:
  1. Beat cream cheese and sugar at low speed until smooth. Add in eggs one at a time and mix well. Lastly add in grated lemon rind.
  2. Pour cream cheese mixture onto crust and bake at 170degree celcius for 20 minutes or until center is set.
  3. Let cake cool in the oven with heat off for 1 hour.

Topping:
  1. For a simple topping, just buy ready mix jelly powder. Follow the instruction and pour on top of the cooled cheesecake.
  2. Chill in the fridge for at least 6 hours or overnight before serving.
